Tannins
Tannins are water soluble compounds that bind with proteins and Iron. Tannins also have the ability to complex with vitamin B12 and have been reported to cause intestinal damage and may possibly cause cancer. Tannins are found in many sour tasting fruits and berries including sour grapes, pomegranates, and persimmons. These compounds are one of the reasons that oak leaves and acorns are considered toxic to reptiles.
